Ingredients:

Empanada dough (store-bought or homemade)
8 oz goat cheese, softened
1/2 cup shredded mozzarella or Oaxaca cheese
1 small onion, finely diced
2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
Salt, to taste
Black pepper, to taste
1 egg, beaten (for egg wash)

Optional additions (use sparingly):
Fresh cilantro or parsley
Red pepper flakes

Instructions:

Preheat your oven to 400°F (205°C). Line a baking sheet with parchment paper.

Heat the olive oil in a skillet over medium heat. Add the diced onion and cook for 3–4 minutes, until softened and translucent. Add the minced garlic and cook for another 30 seconds, until fragrant. Remove from heat and let cool slightly.

In a bowl, combine the softened goat cheese, shredded mozzarella (or Oaxaca cheese), cooked onion and garlic, cumin, smoked paprika, salt, and black pepper. Mix until smooth and evenly combined.

Lay out the empanada dough rounds on a clean work surface. Spoon 1–2 tablespoons of the cheese mixture into the center of each round, being careful not to overfill.

Fold the dough over the filling to form a half-moon shape. Press the edges together and seal by crimping with a fork or folding decoratively by hand.

Brush the tops of the empanadas lightly with the beaten egg to promote even browning.

Arrange the empanadas on the prepared baking sheet, spacing them slightly apart. Bake for 18–22 minutes, or until golden brown and crisp.

Remove from the oven and let cool for a few minutes before serving.
